Kombucha is a fermented mushroom drink sweetened with green or black teas and other exotic ingredients. Rowdy Mermaid Kombucha was created by a dad and inspired by his daughter. Jamba Dunn founded Rowdy Mermaid Kombucha in 2013. Before becoming a Kombucha brew master Dunn worked for Rosetta Stone as a content designer. He knew he wanted a career change. His hobby was home brewing beer and he thought he might open a brewpub. But his daughter was too young to drink his special concoctions so he switched to fermenting mushrooms and become a Kombucha master for libations the entire family could enjoy. When vacationing in a hot spring his wife asked him what he wanted to name his new company. Just when they were getting down to serious business decisions his daughter started splashing water and causing a real ruckus. He tried to calm her down so the adults could talk but, “she was being a very rowdy mermaid.” A legend was born.
As a brew master Dunn took his daughters taste preferences into account. She actually drove the taste of Rowdy Mermaid Komucha. She did not want the drinks to be too sweet nor too sour. Good advice! Rowdy Mermaid Kombucha is focused much more on the use of herbs than other brands. Dunn is adding a lot of fresh ingredients and herbs which helps to change and shape the complexity of Kombuchas. Dunn knew before going into the Kombucha brewing market that a number of other Kombuchas were being sold more for health benefits than for taste. They would list the health benefits of using Kombucha but not list the ingredients that often included a high amount of sugar and acids. Dunn’s strategy turned that around by listing all the ingredients including their fresh adaptogenic herbs but not making any health benefit claims. Rowdy Mermaid Kombucha comes in many flavors using ingredients like Tasmanian pepperberry, chrysanthemums, Changa mushroom and flavor concoctions straight from his 8 year old daughter’s imagination. She created one particular flavor called Flower Grow which she imagined to have everything from roses to cheese. Brew master dad was inspired by her imagination but provided enough adult supervision to withhold the cheese. Other flavor favorites include Lavender, Smokey Badger, and Beet Ginger Mint. Kombucha connoisseurs are drinking it all in with giddy delight.
As good as Kombucha is for kids and their flavorful imaginations Kombucha brews are also good for adult only consumption. It is no big secret that Kombucha pairs well with Tequila. But how about with Beer? New Image Dyad beer is made from Rowdy Mermaid Kombucha. The Kombucha is blended into the beer base, post fermentation in a 20 percent ratio which helps to keep the cultures alive. It creates farmhouse style ale with flavors of lemon and pineapple. It is both tart and quenching. Some of the beer is being barrel aged which results in a more complex, lambic-like fruit character. Rowdy Mermaid and New Image are collaborating on an adult only Kombucha flavor beer to be released soon by Rowdy Mermaid.
The Kombucha craze is getting even trendier with enthusiasts flocking to try new flavors. Aficionados of the fizzy drink are exploring new ways to customize their experience. Kombucha tap rooms have been opened in Kombucha breweries and health food stores are adding kegorators of Komubucha so people can grab a 32 or 64 ounce growler to go. Kombuch breweries and kegs are starting to look a lot like beer breweries and kegs. A lot of early established Kombucha companies have been bought out already by big soda and there is some consumer feeling of inauthenticity about their product. As the craft Kombucha drinking culture continues to multiply Bouder’s Rowdy Mermaid continues to expand. Rowdy Mermaid is growing so quickly that after three months in their new facility they doubled in size again into an even larger 12,000 foot space. They currently employ 15 people but are already planning to expand to 25 by next year. Rowdy Mermaid is growing from a brewery into a beverage company. The demand for Rowdy Mermaid Kombucha products can be heard from coast to coast here in Boulder Colorado at the mile high foothills of the majestic Rocky Mountains. The nationwide Kombucha market surpassed $700 million in 2015 and is predicted to continue to grow for years to come. Kombucha craft probiotic brews may not over take craft beer breweries anytime soon but they may continue to grow exponentially. The Kombucha excitement is not losing its fizz anytime soon.
